The operator audio_to_stereo provides a default conversion from any
channels to stereo. You should be able to use it just after defining a
source. For instance:

  s = audio_to_stereo(request.dynamic(..))

input.http currently only supports http streams that are delivered at
real time rate, that is icecast and similar streams. When used with
files, audio data is transferred at the higher possible rate which, in
turn, pushed too much decoded data in the temporary buffer, which
creates those buffer override that you notices..

Long story short: when dealing with remote files, you should only use
request-based sources, which deal properly with downloading files,
testing them for decodability and queueing them for playout when
ready..
