I created a farm "foo" with the DNS zone "foo.example.com", a subdomain of
my main "example.com".

In the mail role's DNS tab I say
 Create *ext-mailserver* records instead of *ext-%rolename%* ones.

In my farm's DNS zone I have records like
 @ 90 MX 10 ext-mailserver

Mail is addressed to [email protected].

Since Amazon owns the address space, they'll need to create the reverse
records, as you can request at the bottom of that form.  Scalr manages the
forward A record to the EIP for each ext-mailserver instance.
