Thank you, that page was exactly what I needed.  Didn't consider that I might 
need alternate boot media.

Is there any known reason for this?  Is it undesirable for some reason to have 
UEFI available by default? (basically, are there any gotcha's I need to look 
out for?)

I can confirm that the BOOTX64.EFI file is not on the installation
media. To get around the issue for now, you might want to try the
procedure documented here:

I don't have UEFI-capable hardware, so cannot test myself.
