For SVN and Mantis I would recommend the latest version 0.26.13.

I would argue that the manual is "good enough" to get a non-technical
user going. Do you have specific questions about things you do not
understand ?

up Scmbug (using Bugzilla, but still it should be easy to adapt to
Mantis) might be useful to you:
