Nobody ever seems to mention 'Capella', a very underrated and reasonably 
priced music notating program. It cost me �120.00 a number of years ago, and 
I ran it quite successfully on a Mac Performa 630 Dos compatible (had the pc 
card inside). A friend in Holland used it to lay out a book of country dances 
to tunes by Henry Purcell and the result is excellent.
    There seem to be a number of programs on the market which produce quite 
execrable music printing (my pet hate is the bar lines all above one another 
straight down the page!)
    I currently use Sibelius (which has come down considerably in price) as 
it became available in a Mac dedicated version somewhat over a year ago. The 
manual for it is one of the best computer program manuals I have ever seen. 
It starts right from scratch (even tells you how to switch on the computer), 
is full of humour ("Unless you have X-ray vision, you've managed to open the 
box to get at this User Guide."), and has the great merit of the whole manual 
(after a Quick Tour of the program in the first 60 pages) being in 
alphabetical order.
