It's  _The People's Past: Scottish Folk, Scottish History_, done
by Polygon about 1980, then reprinted in 1990 or 91. Great stuff
in it, mostly cultural contexts of music.

For recordings I'd add most any still available by Jeannie
Robertson -- Rounder's "Queen Among the Heather" is a good
current one that includes a bit of Jeannie talking about her
singing. 

Also, that Columbia Records project done by Lomax et.al. that's
recently been reissued on CD.. I think they called it the World
Library of Primitive Music or some such... I'm away from home
and don't have it with me. Anyway, the Scottish CD is all field
recordings and quite varied.
