Mark,
Gnome's mainly developed in C.
Qt _the_ C++ Toolkit for Linux (that's what KDE is developed with).
If that interests you, then opt for KDevelop, it's now quite mature.
Failing that, if you're interested in C and Gnome, then Glade is the way
to go.
There _are_ C++ wrappers for both Gnome and GTK, but these are no more
than wrappers, and they tend to lag _just_ behind the releases of
libraries.
The products you want to look for in this case are Vtk and Gnome-- and
GTK+--
