I'm interested in whatever config files etc that were added to
the sb-toolchain-extras source tree to generate the cs2007q3 toolchain.

The source of the toolchain is available from codesourcery's website.
The sb-toolchain-extras is built on top of that and it's available
among the darcs repositories (or the source tarballs) at
scratchbox.org. That repository has the packaging (deb and tarball)
part too.
