just a tip:I send my pdf to tipografy in pdf 1.5 , with layers (in my works I usualy have layers like this: backgraound/ text/ image ?or bg/ content), pdf-x3 not 'see' layers, but this feature sometimes is very usefull for DTP process, some adjustement can be done easily in Acrobat Pro.??

Only if you have colour management set up properly. And the reason you can not select X-3 is probably that you don't. If the printer does not specifically require X-3 I'd go for 1.5.
