En-dash with spaces indeed looks better than em-dash with or without them, especially when there are couple of dashes on a single page. Some people even use "half-space" around en-dash to further fine-tune visual appearance of a page as a whole.
But, one does not always have liberty to do as Bringhurst recommends, since some (most?) editors often insist on em-dashes. @Wena, if you follow Gregory's advice, make sure you first change em-dashes (--- to ?), and after that do Search-Replace for en-dashes (-- to ?). Having a hyphen next to an en-dash isn't fun, even if easily corrected :-)
