Yeah, the long slow slide is disorienting.  I feel like somebody's spinning me
around. :P

I researched this over last weekend and it seems there is no way to change the
speed of the transitions triggered by <Control><LeftArrow>,
<Control><RightArrow>, and three-finger horizontal swipe.

I've gone back to using keyboard shortcuts to switch between desktops, plus
clicking on applications in the Dock.  For whatever reason, the animation for
those transitions is much more crisp.

Pinning applications is achieved using a contextual click on their Dock icon
then selecting Options > Assign To This Desktop.

Once you have your Desktops set up, then <Control><1>, etc will work well.
(It's possible to assign different shortcuts if you like -- I've actually
repurposed <Control><F1> through <F5> for this job.)
