I recommend visiting Powell's, an enormous 4 story bookstore in the Pearl District with every sort of book you could imagine. It's a bookstore unlike any I've ever seen, and you can easily spend hours there. The Pearl District is great for food and beer as well, with tons of restaurants and breweries. My favorite is Henry's 12th St Tavern, which has delicious food and something ridiculous like 100+ beers on tap. Deschutes Brewery, right down the street from both Powell's and Henry's, is another one I'd recommend.
If they want to spend some time outside, since it's so lovely this time of year, there's a beautiful, moderately challenging 5 mile hike from Lower Macleay Park to Pittock Mansion. It goes along a creek for the lower part (not sure if your friend is a San Diegan, but it's shockingly green if you're coming from southern California), then crosses the creek and switchbacks up a hill through a pine forest. At the top is Pittock Mansion, a beautiful home built about 100 years ago that's currently a museum. You can pay to go in and look around (I didn't, but it's probably cool), or just enjoy the beautiful grounds around the mansion and the amazing view of the city and Mt. Hood. If they're not interested in hiking but still want to see the sights, you can also drive up to the top of the hill and park. I haven't spent tons of time in Portland, but all of those things were pretty memorable for me. Hope your friend has fun!
