I am having the same issue since 18.04. I monitored the memory usage in system monitor. The total RAM uses increases gradually after the boot. Even if no program is running it goes on increasing until it is 100% and then everything freezes. The memory uses by the processes doesn't add up to the total memory uses shown. Whichever program is eating the RAM is not listed in the processes.
