Yes, people are supposed to know what they're doing, but I don't think it'd be a bad idea to have some sort of note like [Bit-Depth Changed;Converted to CMYK] in the title or something with exclamation mark. We do warn when saving to a format that doesn't support all the features the user has used in the document, but will not warn when doing somethign destructive.
