Are you possibly holding the side button as well when you push and hold the digital crown? It's holding the side button which initiates an emergency SOS call on the Apple Watch, not holding the digital crown. See the following instructions as copied from an Apple support article: 1. Can anyone explain how to activate Siri on Apple Watch Series 3 without inadvertently calling Emergency SOS?
