I made the plunge to the GPS model.
Any advice for steps on how to deal with decommissioning my original AppleWatch

Unpairing the watch erases it completely. I think you would have to pair it
again to be able to get to the Reset option.

First unpair your watch from your phone. Then go to Settings on your watch and
reset your watch.
To get to reset on your watch, go to settings, general, and reset.
