If there is no "|" available, perhaps you could use a
substitute character (like a / or \ or ~) and do one "search
and replace" at the end of your editing so you only have to
worry about the "|" once?

That would be possible, but considering how often we use | in abc I 
don't consider that an option...

The free programs at:

http://world.std.com/~gdallal/UKE.HTM

can produce the type output you mention.  Just run the
option that doesn't produce the ukulele chord diagrams.

A most interesting software indeed and a very good idea. They produce good 
output, but so far as I can see they do not read an abc-file that has chords, 
melody line and lyrics in it. It reads a file consisting of lyrics with 
chords over it. That is, however, the file I wanted to make.

I think it should be possible to do this.  There was some talk at one point 
about 'invisible' rests.  I think the best way to do it would be to add a 
field to the V: header indicating that notes are to change to chicken 
scratches. Probably something similar could be done for drum notation.

Try alt 124 (hold alt [not alt gr] key and type 124 on number pad before
