Well, the original 1Gbps radios seem to be a bit flakey, but the new "One" version is supposed to fix that... but I don't have any personal experience with those, so I can't say how they compare to the 2.5G, but I suspect the hardware is closer to the 2.5G model than the original 1G model. But the only real reason not to just go with the 2.5G is the cost difference. I realize we're only talking about 500', but is that going to be enough signal to deal with rain fade with those? maybe do an LHG on one end? I'd recommend the Wireless Wire/wAP version. LHG at that distance is a bit overkill and with Mikrotik removing TX power control (grrr) I've seen some flakiness with links that close. We had some issues with the original 1Gbps units - which they did replace for free, and as I understand it, the 1 gig radios have since been redesigned, but we've had two of the 2.5Gbps links up for close to two years with no real problems.
