One plug for one voltage + amp rating maybe? Like 110vac 15amp, 110vac
20amp, 220vac, etc

I'm realizing after my rant that the mfg probably wants every device to
have a unique plug so a newb doesn't come along and plug an item into an
incompatible power supply.   still seems like one for every device
is too many.

I'd be hard pressed to find two devices, even from the same
manufacturer, that use the same plug.  Molex must make 10 billion
varieties.  WHY?

I feel like there should be a standard -48V plug and a +48V plug with
keys in different positions, then also an agnostic plug with the keys
not present so it slides into either jack (from an isolated power
supply).

Make a slightly different set for 24V, 12V, and 5V.
There! see? That's like 12 kinds of green power plugs, not eleventy
thousand and one.

These are often standard "phoenix" style connectors. I have had good luck
finding many different varieties of them on Amazon.
