I don't know if it is still available but there is an excellent tutorial 
by Gene Asner that I got from Tech Talk on Talking Communities. It's 
quite old but so far not much has changed about Audacity. It also 
includes instructions for mp3 direct cut.

I'm not familiar with recording phone calls, but Audacity gets on well with 
both Jaws and NVDA,

I don’t remember it being “Crap” on my Mac machine when I used it and I would 
have remembered that as I would have remarked likewise here .

unfortunately, the latest version of Audacity which is accessible using 
VoiceOver is still the screen reader version of 2.1.1, which is available here:

On the subject of Audacity, Do you happen to know Dave if it'll axept 
what are called ASIO drivers? I ask because I now have a Zoom H6 and to 
get the full advantages of it as an audio interface which I just find as 
fancy words for a sound card you must install ASIO drivers. I know 
Studio Recorder sees these I know SoundForge Pro does but I'm not sure 
Audacity does. I find it silly SF Audio Studio doesn't though.
