A cell phone costs $30 to $50 a month depending on the provider, the
services and the usage.  I'm not saying a wifi SIP phone could totally
replace a cell phone, but then again I can't integrate a cell phone into
my phone system like I can a wifi SIP phone.

I think it would be pretty easy to justify $100 extra for a GOOD wifi
SIP phone.  The question for me becomes "where do I get a good wifi SIP
phone" ?

The Vtech is tied to Vonage (according to their press 
release)
but I believe that the Uniden is not.
The Uniden press release says:

 Uniden introduces 2005 technology partners Lingo, BroadVoice(R) and 
SunRocket(SM). Proving interoperability with these Internet phone service 
providers will allow consumers to use one of these VoIP platforms with Uniden's 
UIP1868 as part of a complete and cost-effective consumer VoIP offering. 
 
So I'm guessing that the Uniden phone is not locked

In that example you could make outgoing calls only correct? (since incoming
likely needs port forwards)

My advice, not having used a WiSIP phone, is to use an FXS port and plug a
normal cordless phone in. It'll save you all potential problems, and if you
don't like the phone, you can just plug any other one on the market in. 

In a home environment, I'm not quite sure I see the benefit of wifi. Esp. in
range -- I get much more range out of a normal phone that I do my wifi APs.
