It is possible.

1) Use different UDP ports for SIP/IAX/RTP
2) Use different log files and astdb files

But most users do not need this. If you need separate phone systems for 
multiple customers, use separate contexts instead.

This is not necessary if you have two network interfaces to bind the
two asterisks on.

 2) Use different log files and astdb files

One asterisk could also run in a chroot environment (or even both).

I think daemons of asterisk is not possible to have two in the same hardware, however can be had two different sessions of asterisk in tty different.
