If the grills have a regulating valve, but the heat remains too intense, I would contact the manufacturer or the dealer where it was purchased, to discus a repair. Our Sears grill, which is ten or fifteen years old, has a whole in the bottom where grease or other juices drip out, and there is a wire holder which holds a jar or can which catch the material during cooking. It is easy to empty this container between cook-outs. I agree that charcoal still has the best flavor and the next grill I buy will have that as an option, if not the only method of cooking. If the grills have a regulating valve, but the heat remains too intense, I would contact the manufacturer or the dealer where it was purchased, to discus a repair.
