Any thoughts on best deployment/vendor, etc?

Can you define huge? And what is the specific goal of moving to the
cloud? It's a good idea to clearly define your client's goals before
going any farther.

Amazon EC2, probably. There are lots of intermediary services that
ease EC2 deployment, also, although I don't have a lot of experience
with most of them.

Yeah, all of that is done.  Just need to make the choices for the CF part.
