You can use either breath or thighs. I used thighs. Skinless and boneless thighs or breast. I like thighs. Flatten the chicken out between two pieces of plastic wrap Use the palm of your hand or a meat hammer or a bottle out of the refrigerator or whatever. I did four thighs About 1/2 cup more or less of blue cheese Add enough olive oil to make the cheese spread easy over the rough side of the chicken About 1 1/2 tablespoon Roll the chicken up like a jelly roll. Put a wooden toothpick in the chicken to hold together. 2 tablespoons of olive oil and as much as minced garlic as you like. I usually set this a side for a couple hours before needing it. 1/3 c of fine Italian bread crumbs 1/3 c of parmesan grated cheese Mix the two together. Directions: First rinse off the chicken and pat dry with some paper towels. Flatten chicken spread blue cheese over thighs or breast. Roll up like a jelly roll and use wooden toothpick to hold together Roll chicken in olive oil/garlic Lightly coat chicken with crumb cheese. Place on a oven safe dish, skillet or whatever. Bake at 350 F for thirty minutes. Let sit for 5 or 10 minutes and serve.
