Magically Moist Chicken

Serves 4

3 lbs. chicken pieces, skin removed
1/2 c. mayonnaise
1 1/4 c. Italian seasoned bread crumbs

Brush chicken on all sides with mayonnaise.

Place bread crumbs in large plastic bag. Add chicken one piece at a
time; shake to coat well with crumbs.

Arrange chicken on foil-lined baking sheet. Bake at 425 degrees for
40 to 45 minutes or until golden brown and tender.

Serve with you favorite steamed vegetable.

Ingredients

.2 Organic Chicken Breasts

.Sea Salt

.Ground Black Pepper

.Fajita Seasoning (or seasoning of your choice)

.3 cups Organic Chicken Broth

Instructions

1.Wash the chicken breasts and pat dry. Generously season 
with salt, pepper and fajita seasoning.

2.Place the seasoned chicken breasts in a slow cooker. Fully

cover with chicken broth. Cook on low for 6 hours.

3.Remove from the slow cooker and serve. Enjoy!

experimented enough," comments Margaret Shauers of Great Bend, Kansas. "For
tender chicken with a refreshing herb flavor, marinate the meat overnight in
this quick-to-fix yogurt mixture."

TOTAL TIME: Prep: 10 min. + marinating
Bake: 25 min.
MAKES: 8 servings


Ingredients

1 cup fat-free plain yogurt
3 tablespoons lime juice
2 tablespoons snipped fresh dill or 2 teaspoons dill weed
1 garlic clove, minced
1 teaspoon ground cumin
1/2 teaspoon ground ginger
1/4 to 1/2 teaspoon aniseed
1/8 to 1/4 teaspoon cayenne pepper
8 boneless skinless chicken breast halves (2 pounds)




Directions

In a large resealable plastic bag or shallow glass container, combine the
first eight ingredients. Add chicken and turn to coat. Cover and refrigerate
overnight, turning once.

Drain and discard marinade. Place chicken on a rack over a greased 15-in. x
10-in. x 1-in. baking pan. Bake, uncovered, at 350° for 25-30 minutes or
until juices run clear. Yield: 8 servings.

1 serving equals 152 calories, 76 mg sodium, 73 mg cholesterol, 1 gm

Most of the time, unplugging the unit for a minute or so resets it. That's what 
I used to do. You can experiment with that.

I have one. It is not very blind friendly. It has several buttons on it. They 
control the size of the bread i.e. weight, what type it is, i.e. white, whole 
wheat, pizza, etc., and how dark you want it. Their is no way to know which 
setting it is on. It defaults to one, but if you make a mistake you can't clear 
it and start over because it remembers your setting for several hours. I use it 
because I have sighted people in my house. If you can find a way to get around 
these problems such as maybe using the KNFB reader on an IPhone which I haven't 
tried they make a great product.

I had good luck with the wellbuilt model. I was able to mark it all in Braille 
and use it just fine. However, that was an old one. I now have a kitchen aid 
with dough hooks and a hand mixer with dough hooks too and I use these to make 
bread.

I borrowed a friend's machine which was on its last legs.
It was great in terms of access.
The one I purchased to replace it had no default.
I could not tell where it stopped.
It did not go back to start but would end up anywhere with no way for a blind 
person to know.

That's cute, Gary. I rarely use boxes. I like to cook from scratch. I just made 
homemade breakfast burritos with eggs, red potatoes left over from dinner last 
night, sausage, and cheese. Last night, we had baked seasoned chicken breast 
with the very crispy skin, boiled red potatoes, and spinach for dinner. (The 
spinach was frozen.) 

Tonight I am going to do a taco salad. (Brown gound meat with spices and 
onion/garlic; put down lettuce greens, carrots, celery, green onion, tomatoes, 
all diced small, corn chips crumbled on top with salsa and guacamole and some 
shredded cheese for anyone who likes that. I saute my carrotss and celery in a 
little olive oill, but you can leave them raw if you'd like.)

Got a question about coffee, well I enjoy drinking the flavored creamers. So

That will be very good. Make sure you bake meat side down, cover to keep 
moist, and then uncover for last 15 minutes, turn meat side up, and brown.

Stupid question, but I have chicken breast I plan on baking tonight.
How do you put the seasonings under the skin?
Also, I didn't marinate it last night, and plan on baking it once I get 
home, because if I wait a couple of hours, we will be having dinner around 
six/sevenish which is to late for my liking.
I do not have olive oil, and just have vegetable oil, can I mix the 
seasonings with that?
So here's my plan, seasonings under the skin, mix other seasonings with 
vegetable oil and poor on top of chicken breast then bake for 80 minutes 
on 400. thoughts?

1 cup instant coffee granules

1 cup sugar

2/3 cup instant nonfat dry milk powder

1/2 tsp cinnamon

Boiling water



Combine first 4 ingredients and mix well.  Store in airtight container.  For
each serving, place 2 & 1/2 to 3 tablespoons in a cup.  Add 1 cup boiling
water, stir well.

Vanilla Coffee

1/2 cup ground Coffee, any variety
1/4 cup firmly packed brown sugar
6 cups cold  water
1 Tbsp. imitation vanilla

PLACE coffee in filter in brew  basket of coffee maker. Place sugar in empty
pot of coffee maker. Add water to  coffee maker; brew. When brewing is
complete, stir in vanilla until well  blended.
POUR into 6 large cups or mugs.

KRAFT KITCHENS  TIPS

Spiced Orange Coffee
Omit vanilla. Add 1 Tbsp. grated orange  peel and 1/2 tsp. ground cinnamon
to
coffee in filter before  brewing.

Variation
Prepare as directed; refrigerate until chilled.  Serve as a cold beverage
over ice cubes.

NIGHTCAP COFFEE MIX

2/3 cup  Non dairy coffee creamer
1/3 cup  Instant coffee granules
1/3 cup  Granulated sugar
1 teaspoon Ground cardamom
1/2 teaspoon Ground cinnamon

Combine all ingredients in a medium bowl; stir until well blended. Store
in airtight container. Yields 1 1/3 cups coffee mix To serve: spoon 1
heaping tablespoon coffee mix into 8 ounces hot water. stir until well
blended.

1 cup powdered non-dairy creamer
1/2 cup brown sugar
Mocha Coffee Creamer
1/2 cup sugar
1 cup nonfat dry milk
2 tablespoons cocoa
Creamy Mocha Creamer
1 cup dry non-dairy creamer
1 cup chocolate mix for milk
1/2 teaspoon ground cinnamon
Cinnamon Coffee Creamer
2/3 cup sugar
2/3 cup nonfat dry milk
1/2 teaspoon ground cinnamon
Orange Coffee Creamer
3/4 cup sugar
1 cup nonfat dry milk
1/2 teaspoon dried orange peel
Cappuccino Coffee Creamer
1 cup
hot cocoa mix
3/4 cup dry non-dairy creamer
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Mocha Coffee Creamer
1 cup sugar
2 cups nonfat dry milk
4 teaspoons cocoa

Any of this mixes may be made into an instant flavored coffee mix by adding
a 1/2
cup instant coffee to the mix.
