20 Minute Potato Salad

The perfect accompaniment for any barbecue or picnic.

2 lbs. red potatoes; diced
1/4 cup chopped green onions
1 bell pepper; diced
1/2 cup mayonnaise
1 Tbsp. mustard

Boil potatoes over medium-high heat for 12 minutes until 
fork tender. Drain. Toss in remaining ingredients and chill.
Makes 6 servings.
