Hi Sugar, Yes, the consistency would be different. But, I think that cranberries have natural pectin in them, which means that it also may thicken the consistency. You might have to let it sit a bit to thicken when you take it out of the oven. It does sound yummy! Certainly a recipe which you can play around with.
