When you zest you should just get the outer layer. It is quite thin.

I've heard of something called a microplane, for zesting oranges 
and lemons. Can someone explain what it is?


Also, how do you make sure you don't get too much when you're 
trying to get only the thin, outer layer?

You can do that but don't go to deep because the next layer is bitter. You can 
also buy a zester which works well.
