 When compiled out of the box, the upstream git maintainers 
 cater to older cygwin releases, and intentionally disable 
 certain features that have been reported on their mailing 
 list, even though they work with the latest cygwin.  
 Therefore, this build turns those features back on.

What is the easiest way for me to 

1.  find the differences between the upstream git source and the Cygwin git 
source
2.  apply those changes to an older build of git

I'd like to try building git 1.5.0.7, with the Cygwin git features turned back 
on.

I'd suggest downloading and inspecting the git source packages.

You can see a listing of same here:

and that should provide some tantalizing clues.
