There are different "times" in Exif.
You have to change the field "DateTimeOriginal".

I'm scanning my old slides and import them to darktable.
The scanning-software sets the date of scanning.
Before I import the files I set the date with commands like:

exiv2 -M"set Exif.Image.DateTimeOriginal '1991-06-18 00:00:00'"
dia_f232_b2[2-7].jpg

[scolding that you shouldn't edit original files]

You have to remove the files from darktable's library and reimport them. 
Otherwise the changes to the original files won't be picked up.
