Ordinarily when you stop building binary packages, they're semi-automatically removed by the archive scripts when the packages no longer exist in unstable. The problem in this case is that mysql-{client,server}-4.1 *are* still built by a source package in unstable - namely mysql-dfsg-4.1 - so the 5.0.18-1 binaries need to be removed.
