Anyone > got any idea how to fix it? > I did a full reboot of the physical host and the guest VM and after that I was able to connect successfully from virt-viewer on stretch. This is not ideal though. Has anybody else seen the issue?

If spicy has the same issue I'd start looking in libspice-client-{gtk,glib}. The virt-* end did not change since quite some time. -- Guido

The guest is Debian jessie / default GNOME 3 desktop and the client is Debian stretch / default GNOME 3 desktop. I also raised it upstream[1], they suggested Wayland could be a problem (stretch default) but I disabled Wayland and I still have the problem.
