The packages on sury.org are not supported by Debian but they are
produced and maintained by Ondřej Surý, who is part of the Debian PHP
Maintainers team, who maintain the Debian supported PHP packages.

They're not officially endorsed. It's better to consider upgrading to Bookworm 
to have php 8.
