Good question...

As you noticed in my email I stated "Long gone".  These people have left the
company for a long time and no longer receive anything.  The employees, in
our company, keep their email after they leave and redirect their messages
to the appropriate people.  Their mailbox is always deleted after they are
long gone and all emails received are spam.

If the employee has recently left I don't recommend you do what I suggested.

Your initial question was how can you redirect an email to a specific
address if that email is in a CC Field.

What you may want to do is also put a COPY action so you can monitor the
emails that the stated email is being used in the CC or as one of the
recipients.  This will let you monitor when the spam to legit ratio reaches
the point to justify more severe action or when it makes sense to drop the
mailbox and do what I suggested earlier.

How do you handle email that comes in for X-employees but is also
addressed (either TO or CC) to another employee that is legitimate email?

I think the answer is YES.. You need the pro because Pro supports filters.

We do exactly what you want to do.  We have a filter file we call
X_Employees.  This list are employees long gone but their email is
apparently still being sold.  Their mailboxes are deleted but what we know
is if their address is listed in the CC or as part of the recipient then it
has to be spam.

What you can do is:

ALLRECIPS   0   CONTAINS[EMAIL PROTECTED]

You can add weight to this inclusion in the recipient address.

You are correct.  The filtering in the Pro version would be able to add a 
weight in this case, but it is not available in Declude JunkMail Standard.
