Solved - In my case it was a very strange html encoding about copypasting an 
address, in particular for the '@' symbol that wasn't recognized.
I think the recipient's address should be automatically checked. Shouldn't be 
there an automatic workaround for this copypaste typo? Thanks for your 
comments.

Yes the bug does appear randomly with Evolution 3.6.4 on Ubuntu 13.04
