To get the uncompressed size for such a file, you can use: zcat file.Z | wc -c as the .Z files in in compressed format (using compress command), it is normal that gunzip -l reports -1 as uncompressed size the reported size by fileroller of 17179869184 GB is = 2^34 GB or 2^64 bytes, so maybe the -1 is translated to an unsigned max value in fileroller ?
