I had the same issue after uprading from Ubuntu Gnome 17.04 to Ubuntu 17.10. I "fixed it" by using Xorg instead of Wayland. A colleague of me had the same issue in Arch Linux half a year ago. I had a similar issue with Ubuntu Gnome after upgrading to 14.10. Had a double mouse pointer, but only on the main screen, not on the two other screens. Disabled screens one by one and renabled them and the problem was solved.
