The snap for libreoffice 5.4.2 is built against the gnome-3-26 backports PPA. The app queries ~/.config/dconf/user at startup to determine the GTK theme to apply, and if that file doesn't exist (in 17.04 and earlier releases it was created at login) it defaults to Adwaita, instead of the default Ambiance.
