Can you observe the issue yourself with a similar setup?
Where are the files being open located? Is it on a USB stick? If so and
if the stick is mounted read-only, that explains why files can't be
edited. Note that in that case libreoffice should display a ribbon that
informs the user that the file has been opened in read-only mode, and
that it cannot be edited.
What happens if the file is first copied onto the home folder of the
guest session, and then opened?

We are using the guest-session of ldm for an restricted session for
postpaid-modus.
After recent OS upgrade to 18.04, some guests experienced issues, that either
Nautilus mounts their USB-Stick in read-only mode, as also and that is for what
this bug report is for,
That if they open Microsoft documents (type of .docx / .doc), those documents
are opened correctly
but Libreoffice (swriter) reject any input without any error message.
Those documents were NOT secured by any password, as guests are
claiming.
Weirder, if I copy the content of the document into, f.e. abiword, the
program still reject any change or input.
This behavior does not apply when the user creat a blank new document,
but if he try to open a microsoft documen, he is again not able to
edit the content.
This is a major issue for us, as we have already update all our three
PC to 18.04, so we have no alternative. And the customers are
unsatisfied...
