I'm running Ubuntu 20.10. But I think I can answer my own question. It just happened again, and this time all I needed to run was run `apt update`. I didn't even install anything! A quick google search found this page: https://www.linuxuprising.com/2020/07/how-to-restart-gnome-shell-from- command.html. I pressed Alt-F2 and then r, and that stopped the logging without a reboot!
