Agree with it. CentOS7 is almost history, with obsolete packages, kernel,
lack of updates.

We've actually started offering RedHat Enterprise Linux-based APISIX
distributions based on RHEL UBI.

We removed Alpine. Now, you propose to offer CentOS. Is Debian our only
