It should work either way, so don't worry about it. If you shut down the old server before switching servers on the Touch then when you enter My Music it will search for the old server, time out after about 10 seconds, and give you a choice to change servers. With my (NOT Touch) players, it works better to switch the players from the old server to the new server while the old server is turned-on. No, just power cycle your Touch and you should be OK. You can also run two servers at the same time, switching from one to the other using the Touch's menu. I think it's under "Advanced settings".
