I find the Android App, Squeeze Commander to be the easiest way to
switch players from one server to another.

It should work either way, so don't worry about it. If you shut down the
old server before switching servers on the Touch then when you enter My
Music it will search for the old server, time out after about 10
seconds, and give you a choice to change servers.

I don't think you'll get an opportunity to switch via the 'Switch
Library' menu item that kidstypike shows above unless you have both
servers running at same time, as pski advises.

With my (NOT Touch) players, it works better to switch the players from
the old server to the new server  while the old server is turned-on. In
short, don't uninstall SBS on the old server until you change the
players to the new server.

Your Touch should find all instances of Squeezebox server running on
your network - it's "Switch Library" see below.

No, just power cycle your Touch and you should be OK.

You can also run two servers at the same time, switching from one to
the other using the Touch's menu. I think it's under "Advanced
settings". The option is called "Choose library" or "Choose server" or
something like that.
