 1. Owning a SB3 i'd like to know if i can use a 5V-*3A* power supply,
considering that the SB3 supposedly needs 5V-*2A*.

 2. How do i know if the power supply is center positive?

1) yes
2) you need a test meter!

You want to see the signal path BEFORE it gets onto a CD/vinyl...it
ain't what you'd call minimal...SB3+Stontronics PSU - Altmann
JISCO/UPCI - TACT 2.2X (Linear PSU) + Good Vibrations S/W - MF
Triplethreat(Audiocom full mods)- Linn 5103 - Aktiv 5.1 system (6x
LK140's, ESPEK/TRIKAN/KATAN/SEIZMIK 10.5), Townsend Supertweeters,
Kimber Chord cables
Outdoors: Boombox+Creative Sub (If I remember to turn it on...)

Does the 5V/3A power supply in question not have the small diagram on
back pointing to the center as positive?

No - the device only draws what it needs.
