Yep, I took David W's advice and installed MATE on a new Debian VM, and I haven't regretted it. Thanks everybody. I figured that something like that had hapened but did not know how to get back to a Gnome 2-like place. I have used XFCE in the past happily so have installed that and wil also give MAte a go, as I have heard some good things about it. Thanks again! MATE is also an alternative that I believe is in the official repositories now - it's a fork of Gnome 2 and is effectively identical but for names (Due to licensing restrictions, I believe).
