You mentioned to use a 7i76 + one parallel breakout board on the 6I25.

OK that makes sense and would be my preferred setup at the moment, but I 
struggle to figure out
how to configure that.

Using 6i25 internal firmware, I have options for,  one or two 7i76 or two 
parallel breakout boards.

At the moment I've the 7i76 connected on the external port via the MESA 
parallel cable.
And I have that flat cable that connects to the intern header of the 6i25.
But I've no clue how to configure the system in order to get 7i76 and parallel 
breakout board work
together giving me at least the hot desired additional stepper interface.

Can you give me a hand please.

Yes, or just add one of those common "Mach 5 axis" parallel port breakouts

If you have a 5i25 then you can add a second 7i76 on the second header
for 9 step/dir interfaces.
(though that is overkill and a 7i85S would do the job)

If you use a 7i76E as the main card you can add 2x 7i85S to have 13
step/dir channels (and a bunch of unused encoders that can be
configured as generic 5V differential inputs)

My challenge, a 5 axis machine that runs a gantry on axis Y.

The Mesa 7i76 says up to 5 stepper or servo interfaces, but for the machine 
named above I need 6 stepper interfaces.

Somebody has done something similar and can give some advice?
