We don't ask for passphrases: we let GnuPG decide when and how to ask for passphrases. We don't ask you which symmetric cipher or hash to use: we let GnuPG decide which to use. That's been a guiding principle for many years, it's worked well for us, and this close to the end of Enigmail I don't expect we'll be changing it. Choosing a subkey is GnuPG's responsibility, so -- we don't touch it. It is possible to override GnuPG's subkey selection algorithm by setting flags in gpg.conf. IIRC I've used the Preferences -> Advanced -> Additional parameters for GnuPG setting to specify a --local-user for this.
