If you want it to be the default view, then modify the "Messages" view,
which is the default view that all the folders use.

[Evolution] Default View

I defined a new view for mail, but is there a way to set that view as
the default - so that it is used for all folders?  Right now I have to
click on all folders and set the view, which is a real pain :)

Hey, that's cool!  Is there a list of command line options for evolution
somewhere?  I can't find anything in the online help, and "evolution
--help" just spews the boilerplate GNOME usage message with some
uninteresting (to me) oaf controls tacked on the end.

There's no way to do so from the UI, but one workaround is to run 

evolution evolution:/Summary

which will cause it to load that folder automatically.

Why not start evolution from this command:

evolution evolution:/summary
