There are actually 2 different page sizes you need to be concerned
with. The first is the page size you're using for Finale, in Page
Format for Score. This tells Finale the size of the page you're designing for.
The second is the paper size you're physically printing on, which you
get at through Print Setup.
Normally, you want both of these to match. That is, if you've been
telling Finale you're working with (for example) legal size paper
(8.5x14), you also want to put that size paper in your printer.
In Fin2007 (I don't think it was in earlier versions), there's a
checkbox that says 'Fit to Page', which means that your two page
sizes no longer have to match. So if you made a score with a Finale
page size of letter and then you want to print it out larger on
tabloid paper, just make sure you've got tabloid selected in Print
Setup, and do Fit to Page. Finale will scale the entire page up to
fit on the larger paper.

What do you mean "originally", and how did you change it? If you
start with a score on letter-sized paper and then change Page Layout
for Score to tabloid, you also need to Redefine All Pages (in the
Page Layout menu) in order to apply those changes to your existing
pages. If you change your page size from Page Size in the Page Layout
menu, your changes are applied for you.
In any case, Fit to Page should take care of things for you no matter
how your Finale page size is defined.
