I have to admit I don't really understand any of what you wrote.  

 So before asking specific questions about the options you presented... which 
of these is the best way to connect and create databases? I am on Mac OS, if 
that makes a difference.

purchase a copy ofthe Firebird Migration Guide at the link below...

 Though it is titled as a migration guide it covers a lot more than just moving
